CHIA PUDDING WITH BLUEBERRY MILK

INGREDIENTS

  • 1 cup unsweetened organic plant milk (rice milk, almond milk, oatmilk, hemp milk, whatever you like)

  • 1/4 cup blueberries (add more to taste or swap for another seasonal fruit or berry)

  • Pinch of salt

  • 1/4 tsp cardamom powder, freshly ground

  • 2 1/2 tbsp chia seeds, ground

  • 1/2 tsp maple syrup or honey fro sweetness (add more to taste)


DIRECTIONS

  1. Start by making the blueberry milk by adding the plant milk, blueberries, salt, and cardamom to a blender. Blend until smooth and all ingredients are combined.

  2. Add blueberry milk to a small bowl with chia seeds. Allow to sit for about 15-20 mins so the mixture will thicken and the chia seeds will expand.

  3. Mix in the maple syrup or honey to sweeten. Option to top with coconut flakes or hemp seeds. Enjoy!



Notes

  • Bet you never thought of making blueberry milk for your chia pudding...I also bet you never thought it would be so easy!

  • This is a great simple quick weekday breakfast that you can make ahead of time if you need something grab-and-go.

  • Best in the summer and late spring time when blueberries are in season!
