MOOD BOOSTING PEACH SAFFRON COCONUT POPS


6 pops, 5 minute prep, freeze overnight


INGREDIENTS


  • ️2 finger pinch saffron threads, soaked in 2 tbsp warm water for 10 mins 

  • ️2 peaches, chopped, pits removed

  • ️1 cup coconut milk (or rice or hemp milk)

  • ️1/4 tsp cardamom seeds, freshly ground

  • ️1 tsp vanilla extract

  • ️2 tbsp maple syrup


DIRECTIONS


  1. Crush the saffron threads between your fingers and soak in a small bowl with 2 tbsp warm water while you assemble the other ingredients.

  2. Add all ingredients (including the soaked saffron with water) to a blender and blend until smooth.

  3. Add to popsicle molds with a stick or fork. Freeze overnight or for at least 6 hours (if using a fork, freeze for 1 hour, then add the fork while it is half frozen but still mushy).

  4. Enjoy in the summer on a hot day. Avoid eating at night.



Notes

  • If kapha - sub a less fatty milk like rice, soy, or hemp - I have honestly not tried it with one of those replacements but taste wise, it should still be good. BUT, even if you use coconut milk, it is not so bad, the spices in this recipe help to lighten the heaviness of the milk and if enjoyed during summer in moderation - you'll be okay. It is still better than ice cream with 1000 food additives and sugar am I right?

  • If giving to kids - go for it! But I would go easy on the saffron - not that saffron is bad for kids, it is a great herb! It is just energizing ;)....andddd I don't know if all kids need more energy am I right? Just do a little bit less saffron, but you can still include it, especially since the saffron is the main "mood-boosting" element of this dessert.

  • "Why are we freezing things, I thought this was Ayurveda" - yeaaaahh we don't like to eat frozen things in Ayurveda, it depletes digestion. If you are going through a digestive episode or have weak digestion and are trying to strengthen it, try one of the other #dessert recipes. But if you are looking for a fun summer treat that still honors digestion, doesn't have processed sugar, and is good for you and the whole family - this is a great one!
