RESORATIVE COCONUT LADOOS

7-10 ladoos (depending on the size), 10 minutes
INGREDIENTS
1/3 cup almond milk
2 tsp rose water
2 tsp coconut oil
1/4 cup blended/ mashed soft dates
1 1/2 tsp cardamom powder, freshly ground
Pinch of salt
1/3 cup almond pulp or 2 tbsp almond flour
3-6 tbsp coconut flakes plus more for rolling (adjust amount for consistency)
Zest of 1/2 lime (optional, but nice)
DIRECTIONS
Soak the dates in warm water for 5-10 minutes then blend or smash with the back of a fork into a paste. You can add a splash of warm water to the blender if blending.
Warm the milk over medium-low heat. Add rose water, coconut oil, blended/ smashed dates, and salt.
Simmer, stirring continuously until the mixture thickens into a syrup - about 5 minutes.
Stir in the almond pulp or almond flour and cardamom.
Stir in 2 tbsp of the coconut flakes, then turn off the heat and add the rest of the coconut flakes gradually (the amount will depend on consistency - you want it to be thick enough to form into balls).
Allow to cool and roll into balls. Add the lime zest and remaining coconut flakes to a plate. Roll the balls in the coconut/ lime zest mixture and serve.
Notes
For those who make your own almond milk - this is a great way to use the leftover almond pulp! If using store-bought almond milk, feel free to use almond flour, just a smaller amount as indicated. You can also use any plant-based milk besides almond milk.
Ladoos are a classic Indian sweet treat. They are incredibly easy to make and can also be incredibly nourishing. They are typically indicated during re-building/ rejuvenate periods such as postpartum, pregnancy, recovering from stress or burnout.
This also makes a great nourishing sweet treat for kids with a moderate amount of iron and no refined sugar! You can get the kids involved by having them form balls and roll them in the coconut. They will probably want to eat them all!
