SIMPLE OJAS (VITALITY) BOWL

INGREDIENTS
Bowl
Cooked cumin rice
1 bunch kale, chopped, stems removed
1 tbsp ghee
1 cup red lentils, rinsed
1 tsp cumin seeds
1/4 tsp turmeric powder
1 tsp sattvic spice mix (optional)
1 small tomato, chopped (optional)
Dash of cinnamon powder (if using tomato)
2 cups veggie broth, bone broth, or water
Salt and pepper to taste
Sauce
Optional toppings
Chopped Almonds
Chopped fresh ginger
Seeds (hemp Seeds, pumpkin seeds, sesame seeds)
Fresh chopped parsley or cilantro
DIRECTIONS
Cook the rice: cook the cumin rice in a separate small/ medium pot according to recipe instructions. Within the last 5 minutes of cooking, place the chopped kale on top of the rice, do not mix, cover, and allow the kale to steam with the cooking rice until bright green, adding more water/ liquid if needed. Remove the kale, place in a bowl, turn off heat and set aside.
While that is cooking, cook the lentils: heat the ghee in a medium pot. Add the cumin seeds and heat until aromatic. Once aromatic, add the lentils, turmeric, tomatoes (if using), and sattvic spice mix (if using). Mix, then add the liquid (broth or water).
Bring to a boil, then reduce to simmer. Simmer until lentils are tender (about 20 minutes). Season with salt and pepper at the end of cooking
While that is cooking, make the tahini miso sauce according the recipe instructions - it is very easy.
Assemble your bowl: If you timed it right, everything should be done at the same time (20-25 minutes). Build the base with the rice first, then the lentils, then the kale, then the sauce, then your toppings of choice. Enjoy!

Honestly, this recipe is stupid simple, delicious, and excellent for digestion.
A great week-night meal when you don't have the time or energy to think about dinner - it can be made in a variety of ways, you can throw any veggie in with the lentils while they cook or just keep it simple with cumin seeds, turmeric, and salt and pepper. Easy peasy.
The simplicity of this meal is one of the things that make it great for digestion - it is a great go-to when you have been feeling a little "off" and want to get back on track - if this is the intention, you don't even have to do the sauce or toppings, you can keep it simple with rice, kale, and red lentils.
