CARAMELIZED FIGS

12 figs, 15 minutes
INGREDIENTS
12 figs, washed, cut in half, stems removed
2 tbsp ghee
1 1/2 tbsp coconut sugar
1 tsp vanilla extract
1/4 tsp cinnamon powder or freshly ground cardamom
Salt to taste
Fresh basil or mint, finely chopped
Drizzle of honey or maple syrup
Homemade granola or toasted nuts (for topping, optional)
Serving Suggestions (optional)
Drizzle of balsamic vinegar
Serve on top of yogurt, with the yogurt preferably thinned out with water
Serve with fresh paneer, ricotta, or burrata cheese
DIRECTIONS
Mix the coconut sugar, vanilla extract, cinnamon/ cardamom powder, and salt in a small bowl. Set aside.
Heat ghee in a medium saucepan over medium heat. Add the coconut sugar mixture and heat for 30 seconds - 1 minute. Add the figs to the pan cut side down and heat for 3-5 minutes each side.
Transfer the figs to a serving plate. Top with a drizzle of maple syrup or honey, fresh herbs, and granola or nuts for a satisfying crunch. Enjoy!

Notes
I am not a huge fan of figs, but this recipe may convert me.
Figs are an ojas-giving (vitality) fruit that are highly nourishing. Balancing to the mind and body for vatas & pittas. Fun fact: It is said that the Buddha found enlightenment under a fig tree.
I listed the nuts/ granola as optional, but I think they are needed in this dish for texture. It is nice to pair something soft and goo-ey with something crunchy.
Figs go great with cheese, yogurt, and even a drizzle of balsamic vinegar - that sour taste really makes them shine.
This recipe isn't great for kaphas due to its heavy, moist qualities, BUT if you are a kapha and want to try this out in moderation, use less ghee, more granola, and more fresh herbs/ spices.
