5-MINUTE COCONUT CHUTNEY

1/2 cup chutney, 5 minutes
INGREDIENTS
2/3 cup shredded coconut
1 inch piece of fresh ginger, grated
Juice of 1/2 lime
Salt to taste
Water for blending
1 tbsp ghee
1/2 tsp mustard seeds
1/4 tsp cumin seeds
Zest of half a lime
DIRECTIONS
Add the coconut, ginger, lime juice, salt and water (enough for blending, start with 1-2 tbsp and add more if needed) to a blender or food processor. Blend until combined. Set aside in a serving dish.
Next, melt ghee in a small saucepan over medium heat. Add mustard seeds and cumin seeds until the mustard seeds pop and the cumin becomes aromatic. Add lime zest and remove from heat.
Pour the hot ghee & spice mixture directly over the blended coconut. Mix together, adjust seasoning and serve.

It is very easy, and you will not be disappointed - neither will your belly. The coconut cools the body in the summer while the spices make the heavy coconut more digestible. Enhancing digestive enzymes while also nourishing the body and reducing inflammation.
