15-MINUTE VEGGIE LO MEIN

4 servings, 15 minutes
INGREDIENTS
Sauce
5 tbsp water or veggie broth
3 1/2 tbsp soy sauce (braggs, tamari, or coconut aminos - coconut aminos would give a lighter flavor FYI)
2 tbsp + 1 tsp coconut sugar
1 tbsp + 1 tsp sesame oil
Stirfry
9.5 oz package of soba noodles
1 tbsp ghee
6 oz chopped veggies (carrots, broccoli, or make it easy on yourself and use a bag of shredded carrots & broccoli- broccoli slaw)
1 tsp coriander seeds, freshly ground
2 tsp fresh ginger, grated
Salt and pepper to taste
Fresh Lemon juice for serving
Fresh green onion or cilantro or parsley for serving
DIRECTIONS
Add all the ingredients for the sauce to a small mixing bowl. Whisk together and set aside.
In a large saucepan over medium heat, add the ghee. Then add the ground coriander and ginger. Heat for 30 seconds and then add the chopped veggies and salt & pepper. Sauté until veggies are tender (about 5 minutes). Set aside.
Cook the soba noodles according to package directions (about 4 minutes). Set aside.
Add the soba noodles to the pan with the veggies. Mix in the sauce and heat over medium heat for 2-3 minutes.
Top with green onion/ cilantro/ parsley. Serve with a spritz of lemon juice. Serve warm and enjoy!
Notes
Want to add a protein? You can or you can just eat it as is, the soba noodles have an efficient amount of protein. For pitta or vata add cooked tofu, paneer, or chicken. For kapha add edamame, sprouted mung beans, or hemp seeds.
This meal would also go great with a side of steamed kale - we can't forget about our greens! The bitter taste (greens), helps to make this a full meal.
