CREME-FILLED CHOCOLATES



10 eggs, 25 minutes + chilling


INGREDIENTS


Chocolate Shell

  • 1 cup dark chocolate chips (72% cacao at least)


Vanilla Creme Filling

  • 1/4 cup almond butter (or cashew/sunflower seed butter)

  • 2 tbsp coconut creme

  • 2 tsp vanilla extract

  • 1.5 tbsp maple syrup

  • 1/4 tsp cinnamon

  • Pinch of Himalayan salt

  • 1–2 tbsp warm water, as needed to achieve creme consistency (I used 1 tbsp)


Tools

  • Chocolate egg molds OR a muffin tin


DIRECTIONS


  1. Melt the Chocolate: In a double boiler or heatproof bowl over simmering water, melt chocolate chips. Stir until smooth.

  2. Prepare Shells: Spoon ~1 tsp of melted chocolate into silicone egg or mini muffin molds (see below if using a muffin tin method). Tilt or use the back of a spoon to coat the sides. Freeze for 10 minutes.

  3. Make Vanilla Creme: In a small bowl, mix almond butter, coconut creme, vanilla, maple syrup, cinnamon, and salt. Add warm water slowly until smooth and creamy. Chill for 10 minutes to firm.

  4. Assemble Eggs: Remove molds from freezer. Spoon ~2 tsp of vanilla creme (add more to your liking) into each shell.

  5. Seal the Eggs: Spoon remaining melted chocolate over each to fully seal. Chill again for 20–30 minutes until set.

  6. Enjoy: Pop out of the molds and store in the fridge. Enjoy chilled!


If using muffin tin method:

  1. Line each cup of a regular muffin tin with paper liners.

  2. Spoon 1–2 tsp melted chocolate into each and spread it around the base. Chill for 10 min.

  3. Add 1 tbsp chilled vanilla creme filling in the center.

  4. Cover with more melted chocolate to seal.

  5. Chill until set. Peel off the liner and serve!



Notes

  • I tried both versions, the egg mold version and the muffin tin version. To be honest, I liked the muffin tin version better, it kind of turns out like a nut butter cup instead of an egg but the good news is, you don't have to buy an egg mold that you will use one time.

  • Either way, these are delicious. I like more creme than chocolate which is what you get with the muffin tin method. My first batch was kind of messy but still good. Have fun with it! Enjoy!
