4-5 cups, 30 minutes
INGREDIENTS
6 sweet apples, chopped (Honeycrisp works well)
8 cups water
5 medjool dates, pitted and chopped
2-inch piece of fresh ginger, peeled and sliced
2 cinnamon sticks
1/4 tsp cardamom seeds
5–6 whole cloves
1/8 - 1/4 tsp nutmeg, freshly grated to taste
1 strip of an orange peel
Pinch of salt
DIRECTIONS
Add everything to a large pot.
Bring to a gentle boil, then reduce to a low simmer and cover.
Simmer 20–30 minutes on low heat, until apples are soft.
Mash the apples using a potato masher, then strain using a fine mesh strainer (collecting the juice in a pot), using the potato masher to push more juice out of the cooked apples.
Save the cooked apples for a snack or breakfast for yourself or your kids - you essentially made stewed apples! 2 recipes in 1 yay!
