DIGESTIVE & CALMING APPLE CIDER


4-5 cups, 30 minutes


INGREDIENTS


  • 6 sweet apples, chopped (Honeycrisp works well)

  • 8 cups water

  • 5 medjool dates, pitted and chopped

  • 2-inch piece of fresh ginger, peeled and sliced

  • 2 cinnamon sticks 

  • 1/4 tsp cardamom seeds

  • 5–6 whole cloves

  • 1/8 - 1/4 tsp nutmeg, freshly grated to taste

  • 1 strip of an orange peel 

  • Pinch of salt


DIRECTIONS


  1. Add everything to a large pot.

  2. Bring to a gentle boil, then reduce to a low simmer and cover.

  3. Simmer 20–30 minutes on low heat, until apples are soft.

  4. Mash the apples using a potato masher, then strain using a fine mesh strainer (collecting the juice in a pot), using the potato masher to push more juice out of the cooked apples.

  5. Save the cooked apples for a snack or breakfast for yourself or your kids - you essentially made stewed apples! 2 recipes in 1 yay!



Notes

  • Who doesn't love apple cider and their house smelling like fall in the fall?
