ELDERBERRY SYRUP

INGREDIENTS


  • 1 cup dried elderberries (or 2 cups fresh elderberries)

  • 4 cups water

  • 1 cinnamon stick

  • 2 tbsp fresh ginger root, peeled and sliced

  • 6 whole cloves

  • 1 cup raw honey


DIRECTIONS


  1. Bring everything except for the honey to a boil.

  2. Reduce to simmer and simmer covered for 30 minutes.

  3. Strain the herbs/ berries but save the liquid.

  4. Smash the berries in the strainer to get all the juice out, set aside and allow to cool.

  5. Stir the honey into the liquid once cooled.

  6. Store in the fridge for up to 6 months.

Notes

  • Typical advised dosage (consult with doctor first): 1 tbsp each day to promote immunity during flu season. 1 tsp each hour until symptoms subside if sick. Avoid for children under 2.

  • This makes a great holiday gift for friends and family during cold and flu season!

  • Elderberry fruit is interesting because it has a sour taste but is also considered cooling to the body. It is an expectorant (helps expel mucus), anti inflammatory, antimicrobial, antiviral, and antioxidant.

  • Interesting note: a famous English herbalist, Henry Box once said: "For colds, influenza, fevers, inflammation of the brain, pneumonia, inflammation of stomach, bowels, or any other part, this is a certain cure. I have never known it to fail, even when given up and at the point of death, it will not only save at the eleventh hour, but at the last minute of that hour. It is so harmless that you cannot use it amiss, and so effectual that you cannot give it in vain."
