LEMONGRASS MOCKTAIL COOLER



1 serving, 15 minutes


INGREDEINTS


  • 2 cups water

  • 1 small stalk fresh lemongrass (about 4–5 inches, chopped) or 1/2 tsp dried

  • 1/4 tsp fennel seeds

  • 1 fresh mint leaf (optional, but lovely)

  • 1/2 tsp fresh lime juice (or more to taste)

  • 1–2 tsp maple syrup or agave syrup (adjust to your taste)

  • Optional: dash of rose water (optional but fun, cooling, and fancy)



DIRECTIONS


  1. Heat the water to a gentle boil using stove top or tea kettle and then steep the lemongrass, fennel, and mint (if using) covered for 5-10 minutes.

  2. Once cool enough, strain into a cup or glass jar. Let cool until just warm or room temp.

  3. Stir in lime juice and maple/agave syrup. Add rose water if using.

  4. Chill and garnish with mint or a sliver of lime zest. Enjoy!



Notes

  • Refreshing, fun, cooling, mojito-like mocktail for the summer!

  • If you can't find the fresh lemongrass and want to use dried, here is an Amazon link to an herbal company I used a lot for organic bulk herbs - Dried lemongrass

  • This drink is pacifying for all doshas in the summertime, BUT, it may be a bit vata aggravating due to its subtle light and dry qualities. So if you are feeling super vata, have in moderation. Overall, this is a great drink for most body types while enjoying the summer weather.
