LEMONGRASS MOCKTAIL COOLER

1 serving, 15 minutes
INGREDEINTS
2 cups water
1 small stalk fresh lemongrass (about 4–5 inches, chopped) or 1/2 tsp dried
1/4 tsp fennel seeds
1 fresh mint leaf (optional, but lovely)
1/2 tsp fresh lime juice (or more to taste)
1–2 tsp maple syrup or agave syrup (adjust to your taste)
Optional: dash of rose water (optional but fun, cooling, and fancy)
DIRECTIONS
Heat the water to a gentle boil using stove top or tea kettle and then steep the lemongrass, fennel, and mint (if using) covered for 5-10 minutes.
Once cool enough, strain into a cup or glass jar. Let cool until just warm or room temp.
Stir in lime juice and maple/agave syrup. Add rose water if using.
Chill and garnish with mint or a sliver of lime zest. Enjoy!

This drink is pacifying for all doshas in the summertime, BUT, it may be a bit vata aggravating due to its subtle light and dry qualities. So if you are feeling super vata, have in moderation. Overall, this is a great drink for most body types while enjoying the summer weather.
