REJUVENATING FIG JAM


about 1/2 cup jam, 25-30 minutes


INGREDIENTS


  • 1/2 pound of figs (about 227g or 1 cup)

  • 1 1/2 - 2 tbsp organic cane sugar

  • 1 tsp orange zest

  • 1 tsp lemon juice (or orange juice since you're already using it)

  • 2 tbsp water

  • Pinch of salt

  • Optional: 1/4 tsp vanilla extract or 3-5 threads of saffron, crushed between the fingers (omit saffron if pregnant)

DIRECTIONS


  1. Cut the hard stem and ends off of the figs and quarter them.

  2. Add the chopped figs, cane sugar, orange zest, lemon juice, water and salt to a small pan over medium-low heat (start low to prevent burning).

  3. Allow to heat on medium low, stirring occasionally to prevent burning (add more water if needed), for 25-30 minutes (a low and slow cook time helps the figs release their natural sugars).

  4. If using saffron, crush the threads between your fingers and add them to a small bowl with about 1-2 tsp of warm water. Allow the saffron to soak in the warm water for 10-15 minutes while the jam is cooking

  5. Stir in the vanilla or saffron soak (with the warm water) in the last 5 minutes of cooking.

  6. Allow to cool and enjoy!


Notes

  • Figs! A highly underrated summer fruit - cooling, anti-inflammatory, alkaline, mood and energy boosting, and very spiritual fruit.

  • Figs are also great for constipation - they are a natural laxative and have a downward-moving energy (like dates) that not only facilitates healthy BMs, but also helps reduce feelings of anxiety and insomnia.

  • This fig jam recipe can be used on toast, with whipped ricotta, a yogurt bowl, chia pudding, mad into a fig bar for kids - whatever you like!
