CHEESE & BROCCOLINI DIP

Makes 1 cup, 10 minutes
INGREDIENTS
2/3 cup organic cottage cheese
5 stalks broccolini
2/3 cup water
1/2 tsp cumin powder
pinch asafoetida (optional)
2 tbsp of fresh basil (optional)
1 tsp ghee
Salt & pepper to taste
Juice or 1/2 lime
DIRECTIONS
Heat the ghee over medium heat in a medium saucepan.
Add the ground cumin and saute for 30 seconds. Add the broccolini and 1/3 cup of water. Cover and allow the broccolini to steam until soft (5-10 minutes).
Add the steamed broccolini, cottage cheese, other 1/3 cup of water, asafoetida, basil, salt and pepper to a blender or food processor.
Blend until smooth/ desired consistency. Top with fresh lime juice and serve as a spread or dip. Enjoy!
Notes
So you want to bring a crowd pleasing dip to a party but you also want it to be digestable and not weigh you and everyone else down - this is it.
The broccolini and spices in this dish help to offset the heaviness of the cottage cheese making it suitable for kaphas.
Cottage cheese tends to be easier to digest than other cheeses. Good for vata and pitta but keep in mind that kapha should have all cheese in moderation.
