CILANTRO COCONUT SAUCE

Makes 1 cup, 5 minutes


INGREDIENTS

  • 1/2 tbsp fresh ginger, freshly grated

  • 1/2 cup fresh cilantro, chopped

  • 1/2 cup Kale, chopped, stems removed

  • 1/4 cup coconut milk

  • 1/4 cup water

  • 2 finger pinch asafoetida powder

  • Juice 1/2 lime, add more to taste

  • Salt & pepper to taste


DIRECTIONS

  1. Add all ingredients at a blender and blend until smooth, adding more water if needed.



Notes

  • A great sauce that can go on just about anything - wraps, grain bowls, burrito bowls, burritos, hash, kitchari, cooked veggies.

  • Use anytime you are looking for a cooling demulcent way to add more flavor to your meals - great during the summer and fall.
