CILANTRO COCONUT SAUCE

Makes 1 cup, 5 minutes
INGREDIENTS
1/2 tbsp fresh ginger, freshly grated
1/2 cup fresh cilantro, chopped
1/2 cup Kale, chopped, stems removed
1/4 cup coconut milk
1/4 cup water
2 finger pinch asafoetida powder
Juice 1/2 lime, add more to taste
Salt & pepper to taste
DIRECTIONS
Add all ingredients at a blender and blend until smooth, adding more water if needed.
Notes
A great sauce that can go on just about anything - wraps, grain bowls, burrito bowls, burritos, hash, kitchari, cooked veggies.
Use anytime you are looking for a cooling demulcent way to add more flavor to your meals - great during the summer and fall.
