COCONUT PESTO

Makes 1/2 cup, 5 minutes


INGREDIENTS

  • 1/2 cup fresh basil leaves

  • 1/2 cup coconut milk

  • 1 tbsp olive oil

  • dash cayenne pepper or red pepper flakes (optional)

  • Juice 1/2 lime, add more to taste

  • Salt & pepper to taste


DIRECTIONS

  1. Add all ingredients at a blender and blend until smooth, adjusting taste as needed.



Notes

  • Yummy creamy summer-time pesto!

  • Use on top of any grain bowl, roasted veggies, pasta, wrap, sandwiches, or flatbread - as a pizza!
