COCONUT PESTO

Makes 1/2 cup, 5 minutes
INGREDIENTS
1/2 cup fresh basil leaves
1/2 cup coconut milk
1 tbsp olive oil
dash cayenne pepper or red pepper flakes (optional)
Juice 1/2 lime, add more to taste
Salt & pepper to taste
DIRECTIONS
Add all ingredients at a blender and blend until smooth, adjusting taste as needed.
Notes
Yummy creamy summer-time pesto!
Use on top of any grain bowl, roasted veggies, pasta, wrap, sandwiches, or flatbread - as a pizza!
