DIGESTIVE GINGER SLICES

Makes 1/4 cup, 5 minutes, good for 2-3 days


INGREDIENTS

  • 2-inch piece of fresh ginger, peeled and thinly sliced

  • Juice of 1 small lime

  • Pinch of salt


DIRECTIONS

  1. Peel and slice the ginger into thin 1/8 inch slices (about the thickness of a quarter/ coin).

  2. Squeeze the lime juice over the slices (enough to submerge the slices).

  3. Add salt. Store in the fridge for up to 3 days - they are better when they are freshly made.



Notes

  • This is a classic Ayurvedic recipe to be used in cases of low appetite or slow sluggish digestion.

  • Typically used as 1 ginger slice 15-20 minutes before lunch and/or dinner. They are SPICY so use them sparingly, not for everyday use, use with caution if pitta.

  • Can also be chopped up and put as a topper on grain bowls for an extra digestive kick.
