FLOURLESS CHOCOLATE CAKE

1 8-9 inch round cake, 25-30 minute bake time for the cake - but longer to roast the sweet potato (see below)
INGREDIENTS
1 1/2 cups roasted sweet potato purée (about 2 medium sweet potatoes, roasted, it is easy and mostly hands off, see instructions below)
1/3 cup pure maple syrup
4 tbsp melted ghee
1/3 cup raw cacao powder
3/4 tsp ground cinnamon
3/4 tsp ground cardamom
2 finger pinch ground ginger
1/4 tsp salt
3/4 tsp baking soda
1½ tsp apple cider vinegar
Optional: your favorite dairy-free whipped topping, option to add a sprinkle of freshly grated nutmeg to the whipped topping to make it even more digestible.
DIRECTIONS
To roast the sweet potato: preheat the oven to 375 degrees Fahrenheit. Poke the sweet potatoes all around with a fork. Place on a baking tray and bake uncovered, unoiled, until very soft and the skin is easy to peel off (about 45 mins - 1 hour).
Remove from the oven, reduce heat to 350 degrees Fahrenheit, allow the sweet potato to cool, peel off the skin using your fingers.
Add sweet potato to a mixing bowl, mash with a fork or potato masher, then add the other ingredients and mix.
Pour into greased 9-inch round pan. Bake 24–30 minutes. It is done when the center is set but still slightly soft. It will firm up as it cools. Allow it to cool for 20-30 minutes before cutting or removing from the pan.
Notes
Late winter and spring is kapha aggravation season - people have mucus, weight gain, lethargy. But, the thing about kaphas, is they love a good sweet treat - especially on valentines day. This is made with the intention of being that sweet treat while still being light, energizing, and uplifting to kaphas.
Good for all doshas - don't leave out the cardamom, it is there to make the caffine in the cacao more digestible, avoiding overstimulation. If a sensitive vata or pitta, leave out the ginger powder.
How to know when it is done: flourless cakes are different. When you remove it from the oven, the center should look set (not glossy or wet), but feel softly tender when lightly pressed, it may dip slightly. This is correct. It will firm up and become sliceable as it cools for 25–30 minutes. Do not overbake.
