GINGER TEA

Makes 2 cups, 30-40 minutes
INGREDIENTS
1-2 inch piece of fresh ginger, peeled, sliced
3 cups water
DIRECTIONS
Add water and ginger to small pot and bring to a boil.
Reduce to simmer.
Allow to simmer partially covered for 30 minutes or until about 2 cups liquid remains.
Enjoy warm, 2 cups a day between meals
Notes
Everyone should know how to make a classic ginger tea.
Good for all doshas but can be a little spicy for pittas. If pitta, it is okay to have this in the fall-early spring months. Use in moderation in late spring and summer.
Ginger is termed as "universal medicine" in Ayurveda. It is great for digestion, coughs, colds, flus, improving lymphatic flow, nausea, motion sickness, circulatory sluggishness, migraines, and more!
If making GINGER CORIANDER tea (great for fevers): add 1/2 tbsp of coriander seeds and simmer it along with the ginger in the same pot.
If making GINGER CINNAMON tea (great for general immunity when sick: Add 1-2 cinnamon sticks and simmer it along with the ginger in the same pot.
