GINGERBREAD BREAKFAST LOAF

1 loaf (about 8 slices), 1 hour total (40-45 min bake time)
INGREDIENTS
Wet ingredients
1/4 cup molasses (or mix 3 tbsp coconut sugar and 1 tbsp of hot water together if you do not have molasses)
1/4 cup maple syrup
1 cup applesauce
1 egg or flax egg (1 tbsp ground flax seed, mixed with 2 tbsp warm water)
1/4 cup ghee or coconut oil, melted
1/2 cup almond milk (or any plant-based milk)
Dry ingredients
2 cups gluten free all-purpose flour blend (trader joe's or bobs red mill works well)
2 tbsp hemp seeds (optional)
1/4 cup crushed walnuts (optional)
1 tsp baking powder
1 tsp baking soda
1/2 tbsp ground ginger (use 1 tbsp if kapha)
2 tsp cinnamon powder
1 tsp cardamom powder, freshly ground
1/2 tsp nutmeg powder, freshly ground
1/4 tsp ground cloves
1/4 tsp salt
DIRECTIONS
Preheat the oven to 350 degrees Fahrenheit.
Mix the dry ingredients and wet ingredients in separate bowls, then combine together.
Bake for 40-45 minutes or until knife/ toothpick comes out clean when peirced through the center.
Allow to cool before slicing. Serve warm with a schmear of ghee. Enjoy!

Notes
I mean come on, we have to have a gingerbread loaf in December!! - With this recipe, we get the taste and nostalgia without the inflammation.
Molasses is an interesting sweetener. It is considered warming which makes it great in the fall and winter. It helps build the blood, muscles, heart, and can be helpful during post-partum and pregnancy. But it does increase pitta and kapha, so use in moderation, like anything else.
Avoid this recipe during the warmer months because it is warming! Keep it for the cooler months.
