HOMEMADE SWEETENED CONDENSED MILK


About 1 cup, 20-30 minutes


INGREDIENTS


  • 2 cups unsweetened almond milk or coconut milk (use almond milk if kapha)

  • 4 Medjool dates, pitted

  • 1-2 tbsp organic cane sugar

  • Pinch salt

  • Pinch of ginger powder or freshly ground cardamom (use ginger if kapha)

  • Pinch of saffron, crushed between fingers (optional, but nice, especially if you want to boost fertility, energy, and mood - omit saffron if pregnant)

  • 1 tsp vanilla extract


DIRECTIONS


  1. Soak dates in warm water for 10 minutes.

  2. Blend almond milk + dates until completely smooth.

  3. Pour into a saucepan and bring to a gentle simmer over medium-low heat.

  4. Cook uncovered for 20–30 minutes, stirring frequently, until reduced by about half.

  5. Stir in cane sugar, spices, and salt.

  6. Continue cooking another 5–10 minutes, stirring, until thickened, slightly glossy, coats the back of a spoon.

  7. Remove from heat and stir in vanilla extract.

  8. Let cool, it will thicken further as it sets.



Notes

  • The only sweetened condensed milk you will need for your sweetened condensed milk needs. It is honestly delicious.

  • I am Cuban, and we use sweetened condensed milk A LOT. So, this is like a taste of home for me, BUT without the extra processed sugar and inflammation.

  • This is kind of like making the Ayurvedic classic recipe "almond date shake" or my version of this recipe HERE and turning it into sweetened condensed milk. Almond + dates + saffron made into a drink is a classic combo for rejuvenating reproductive tissue for menstruating women, post-partum women, and perimenopausal women. So, we just repurposed a classic tonic as sweetened condensed milk! Look at us go! Yay!
