PAPAYA COLADA

Makes 4 cups, 10 minutes


INGREDIENTS


  • 2 cups papaya, peeled, seeds removed, chopped into cubes

  • 2/3 cup unsweetened coconut milk

  • 2/3 cup coconut water

  • 2/3 cup water

  • Juice of 1/2 a lime (add more to taste)

  • 1 tsp fresh ginger, grated

  • 2 tbsp maple syrup, agave syurp, or raw honey (add more to taste)

  • Mint leaves for garnish (optional)


DIRECTIONS


  1. Add all the ingredients into a blender and blend into a uniform consistency.

  2. Taste and adjust for sweetness and tanginess by adding more lime juice or sweetener.

  3. Pour mixture into a glass and add mint leaves and/or lime as garnish. Serve at room temperature and Enjoy!



Notes

  • Great for constipation or variable/ nervous digestion (vata type of digestion).

  • Substitute another less fatty plant-based milk for the coconut milk if kapha or pitta/kapha. Increase the amount of ginger if kapha.

  • Serve on its own as a quick breakfast or snack. All smoothies are best during the warmer months.
