STRAWBERRY ROSE SCONES

6-8 scones, about 30-35 minutes
INGREDIENTS
Dry
1 1/2 cups gluten-free flour blend (your favorite organic brand - I used Bob's Red Mill)
2 tbsp arrowroot flour
1 tbsp baking powder
1/4 tsp salt
1 tsp ground cardamom (freshly ground from the seed - use a coffee grinder to grind the cardamom seeds into a powder - yes this makes a difference in both gut health & taste)
Wet
1/4 cup pure organic cane sugar
1/2 tsp rose water
1/3 cup + 2 tsp melted ghee or coconut oil
1/2 cup + 1 tbsp plant milk
1 tsp vanilla extract
Add-ins
1/2 cup finely chopped strawberries (you can increase to 3/4 cup if you want more strawberry flavor and natural sweetness)
1 tbsp flour (for tossing strawberries)
Coconut rose glaze (optional if you want extra sweetness and you like fancy things :))
1/3 cup powdered cane sugar (you can easily make this from the cane sugar you already have, just add the sugar to a blend and blend into a powder)
2 - 3 tsp coconut milk
Splash vanilla
1 - 2 drops rose water
DIRECTIONS
Preheat oven to 375°F. Line a baking sheet with parchment.
In a large bowl, mix flour, arrowroot, baking powder, salt, and cardamom.
In a separate bowl, mix sugar, rose water, melted ghee, milk, and vanilla.
Toss chopped strawberries with 1 tbsp flour.
Pour wet ingredients into dry. Mix gently until just combined.
Fold in strawberries carefully.
Let dough rest 5–10 minutes (this helps hydrate the flour and prevents dryness).
Shape into a thick disk (about 1-1.5 inches high) on parchment. Cut into 6-8 wedges.
Bake 19–22 minutes, until the edges are lightly golden, tops feel set, and centers are soft but not wet.
Whisk together the ingredients for the glaze in a small bowl. Add to the scones once cooled.
Allow the scones to cool for 10 - 15 minutes before eating & glazing. Consume warm (or room temp but preferably warm for taste & digestion).
Notes
Welcome to strawberry season! Early/ mid spring, lasting through summer. Strawberries are awesome. Anti-inflammatory, stress reducing, loaded with vitamin C and antioxidants, some studies even show anti-carcinogenic, anti-cancer, and anti-proliferative effects which is pretty cool when it comes to many chronic stress related diseases and cancer.
Strawberries are also considered digestive - full of digestive enzymes that strengthen digestion & clearing out food that is undigested, which is ALSO pretty cool that they come in season during a time where digestion is naturally weaker, heavier, slower & more sluggish.
Both strawberries & rose reduce stress, inflammation, and excess heat in the body. Especially in the lymphatic system and reproductive tissue. I have seen rose alone do some pretty great things for the female reproductive tissue - stopped one of my clients fibroid & intense menses issues.
The rose taste here is subtle, so feel free to add more if you like rose - just don't over-do it since rose can be overpowering.
