SUMMER BERRY OVERNIGHT OATS

About 3 servings, 5-minute prep


INGREDIENTS


  • 1 1/2 cups berries (blackberries, blueberries, raspberries, strawberries, whatever you like)

  • 1 cup unsweetened plant-based milk

  • 3/4 cup rolled oats

  • 3 tbsp chia seeds

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon powder

  • 1/2 tsp cardamom powder (freshly ground)

  • 2-3 dates, pitted and chopped or pulled into pieces with your fingers

  • Pinch of salt

  • Zest of 1/4 small lemon (optional)

  • Maple syrup or honey for serving

DIRECTIONS


  1. In a small bowl or the same container you are going to store your oats in, smash the berries with a potato masher.

  2. Add the rest of the ingredients except the sweetener. Cover and refrigerate overnight.

  3. Do not eat this cold. Warm your serving before consuming. Add sweetener of choice after heating (avoid heating the honey if using honey).

  • This is a great summer breakfast for when you are busy, on the go, or getting the kids ready for school. Just make sure you take the 5 minutes to heat it up.

  • Why not have this cold straight out of the fridge like most people do? A couple of reasons:

    • Eating cold food will weaken digestion, especially in the morning time when the cold and heavy qualities are already high.

    • Fruits combined with other foods, especially sweet fruits, are not a good food combination and will lead to gas and bloating. UNLESS, you cook the fruit with the other foods and add good quality spices like cinnamon and freshly ground cardamom. You could even add the sweet spice mix in this recipe or substitute it for the other spices.

  • You could also make this recipe without the berries and enjoy heated or at room temperature :).
