SUMMER SUSHI BOWL

INGREDIENTS
Bowl
1 cup basmati rice, rinsed
2 cups water
Salt and pepper to taste
Avocado slices
1 package pre-cooked edamame (or frozen if you cannot find pre-cooked in the produce section - hint hint if you live in the USA Trader Joes has it)
Freshly chopped cilantro
Tamari or coconut aminos for topping (optional)
Dash of red pepper flakes (optional)
Avocado ginger "wasabi"
1 avocado
2 tbsp coconut aminos
2 inch piece of fresh ginger, peeled and grated
1/4 - 1/2 cup water (adjust to desired consistency)
Juice of 1 whole lime
Salt and pepper to taste
Cucumber salad
2 medium cucumber, peeled and thinly sliced
2 tbsp rice vinegar
2 tsp sesame oil
2 tsp sesame seeds
Salt and pepper to taste
DIRECTIONS
Start by cooking the rice: Add the rinsed rice and water to a medium pot. Bring to a boil, reduce to a simmer, cover, and allow rice to cook until tender (about 20 minutes).
While that is cooking, make the cucumber salad: Peel and slice cucumbers, add to a medium mixing bowl. Add the other ingredients, mix until combined. Set aside.
Then, make the avocado ginger wasabi: Add all ingredients to a blender and blend until smooth. Set aside.
Next, cook the edamame according to package directions. Set aside.
Then, assemble your bowl! Add rice as the base, then top with the cooked edamame, cucumber salad, avocado ginger wasabi, extra avocado slices, cilantro, a dash of sesame seeds and/or red pepper flakes (optional), and dash of tamari or coconut aminos.
Notes
Who doesn't crave a cooling sushi bowl in the summer?
You can add almost anything to this bowl. If wanting to add cooked fish or meat, just go easy on the rice as meat/ fish is heavy, rice is heavy...so thats a lot of heaviness...unless you are a vata or very very hungry pitta, then you can get away with it.
Try not to add any lemon or lime to this dish, lemon/ lime + cucumbers is not a good food combination.
For kaphas: this is a great meal for you in the summer but if you want to add a little extra heat to it you can - aka more ginger and more red pepper flakes. But don't go too crazy, because it is summer :).
