SUMMER VEGGIE GRAIN BOWL

INGREDIENTS
Bowl
1 cup super-grain mix or barley, rinsed and soaked for at least 1-2 hours with a spritz of lemon or lime juice or vinegar
2 cups water
1 tbsp ghee
1/2 tsp cumin seeds
1/2 tsp chili powder or any digestive spice mix
1 cup zucchini, chopped
1 cup squash, chopped
1 cup Kale (or any mixed greens)
Salt and pepper to taste
Sunflower seeds, chopped fresh cilantro, and optional peeled and chopped cucumbers for topping
Dressing
2 tbsp tahini
2-inch fresh ginger, grated
1/4 cup water (add more to desired consistency)
1 tbsp maple syrup
1 tsp Dijon mustard (optional, but delicious)
Juice of 1 medium lime
DIRECTIONS
Bring the water to a boil in a medium pot over high heat, add the grain mix, reduce to a simmer, cover, and allow to cook until soft. Add salt and pepper to taste once cooked
Heat ghee in a separate medium saucepan. Add the cumin seeds and heat until aromatic, stirring frequently.
Add the zucchini and squash to the ghee and cumin. Add the chili powder/ digestive spice mix and salt and pepper. Cover and allow to cook/ steam until tender over medium-low heat, stirring occasionally. Add kale within the last 5 minutes of cooking and heat until bright green and wilted.
While that is cooking, make the dressing by mixing all the ingredients for the dressing in a small bowl.
Assemble your bowl by using the cooked grain mix as the base, then veggies, then sauce, then sunflower seeds and cilantro. Enjoy!
Notes
A satiating and delicious summer grain bowl for our hungry pitta bellies during the summer :)...WITHOUT being too heavy.
Option to add a protein to this dish if you are vata or pitta (paneer, tofu, chicken, turkey, cooked mung beans or lentils) or have as is. There is a wonderful amount of protein in the super grain mix, keeping you full and nourished :).
