ULTIMATE SIX-TASTE SUMMER SANDWICH


1 sandwich, 5-10 minutes to assemble


INGREDIENTS


  • Your choice of bread - a sprouted whole grain bread, sourdough bread, gluten-free bread, or lettuce wrap

  • Beautifully Bitter Creamy Kale

  • Sliced Avocado

  • Your choice of protein (fresh mozzarella, fresh paneer, crispy tofu, sliced meat, etc)

  • Easy Veggie Relish

  • Fresh sprouts or sliced cucumber (optional)

  • Fresh herbs such as basil and/or cilantro

  • Salt & pepper to taste

  • Spritz of lime (optional)

  • Drizzle of olive oil (optional)

DIRECTIONS


  1. Start by toasting the bread.

  2. Once toasted, add the bitter kale to one slice and sliced avocado to another slice. Season the avocado with salt & pepper, spritz of lime, and drizzle of olive oil.

  3. Then, stack your other ingredients - the protein, veggie relish, fresh sprouts or sliced cucumber if using, and fresh herbs.

  4. Close the sandwich and enjoy!



Notes

  • I feel like Summer is the time for sandwiches since we are more active - on the boat, at the beach, at the pool, running out the door - we need something easy, hand-held, grab & go, that doesn't require a lot of cooking.

  • Kaphas will do best with less oil and less avocado and more sprouts, veggies, kale, herbs, etc - the lighter ingredients :). It just takes mild adjustments for your body but you can absolutley enjoy this sandwich.

  • You can really make a sandwich out of anything; this recipe is just an example. I like to include all 6-tastes in a sandwich like this so it is not too heavy, not too light, and generally well balanced for digestion, the mind, and total body. That way, you don't feel like you are craving anything after eating the sandwich - because it has all the tastes! You walk away satisfied.

  • Here are the 6 tastes in this sandwich:

    • Sweet - avocado, parts of the veggie relish (since some of those veggies are sweet), olive oil, and the protein you choose.

    • Salty - salt within the relish, kale, and any additional salt you add to the sandwich.

    • Sour - lime spritz (this is optional, a pickle or yogurt sauce would also count as a sour)

    • Astringent - kale, cucumber, sprouts

    • Bitter - kale & sprouts

    • Pungent - the spices in the relish, kale, and fresh herbs

  • Obviously, the key to making this sandwich is to have all these ingredients already made. But, even if they are not made, they are easy to whip up and have on hand for future sandwiches throughout the week.
