CRISPY TOFU WITH CREAMY DILL SAUCE

INGREDIENTS
Crispy Tofu
1 block tofu, pressed & drained
1-2 tbsp avocado oil or ghee
Salt and pepper
Creamy Dill Sauce
1/2 cup fresh dill, finely chopped
2 tbsp olive oil
1 tbsp water
1/2 tbsp -1 tbsp tahini (adjust to taste)
3 tbsp lemon juice
Salt and pepper to taste
Serving suggestions to make it a full meal
Cumin rice, lemon rice, or saffron rice (pick one)
DIRECTIONS
Whip the sauce together or in a small bowl or in a food processor to grind the fresh dill more. Set aside.
Slice the pressed tofu into thin rectangular slices. Heat the oil in a large saucepan over medium heat. Once the pan is hot, add the tofu slices and sprinkle with salt and pepper (you want the tofu to sizzle once it hits the pan so make sure the pan is hot). Heat one side of tofu for 6 minutes, then flip.
While that is heating, prep the fennel slaw and one of the rice dishes (if using).
Once tofu is cooked, transfer to a plate and pour the sauce over the tofu slices.
Serve with fennel slaw and/or any #grainsideoption to complete the meal. Enjoy!

Notes
This is an extremely easy, tasty, and versatile tofu recipe. You can serve it with on top of whole grain bowls, root veggie bowls, pastas, salads, or #ontheroad wraps and sandwiches - I actually made this into a sandwich recently with romaine lettuce, fresh mozzarella, fennel slaw, with an extra schmear of the above sauce on sprouted grain bread - YUUUUM.
If you don't have dill, you can sub another fresh herb such as basil.
