WINTER IMMUNITY GREEN SOUP


4 servings, 15 minutes


INGREDIENTS


  • 2 cups spinach, chopped, stems removed 

  • 2 cups kale, chopped, stems removed 

  • 3 cups veggie broth, bone broth, or water

  • 1 1/2 inch fresh ginger, peeled and chopped

  • 1/3 onion, chopped 

  • 2 tbsp ghee

  • 1 tsp mustard seeds

  • 1 garlic clove, chopped 

  • 2 tsp dried thyme 

  • Salt and pepper to taste

  • Fresh lemon juice for topping

  • Cooked cumin rice for serving (or cooked quinoa) 


DIRECTIONS


  1. Add spinach, kale, broth, ginger, and half of the chopped onion to a blender. Blend until smooth. Set aside.

  2. Add ghee to a large pot over medium heat. Add the mustard seeds and heat until they begin to pop. Add the garlic and the rest of the onion. Sauté until translucent. Then, add the thyme.

  3. Once all the spices are aromatic, add the spinach/ kale puree. Season with salt and pepper. Allow to simmer for 10-15 minutes uncovered. Serve with cooked cumin rice or quinoa.



Notes

  • This soup is light, so if you are super hungry, it is not for you unless you have it on the side with something else. It is best used when you or someone in your home is sick with coughing and congestion.

  • This soup is a variation of Dr. Vasant Lad's spinach soup. In his soup, he uses just spinach, adds 4 curry leaves, and 1/2 green chili. If you are kapha and have access to those ingredients, feel free to add them in!

  • Garlic & onion - if you haven't noticed from our other recipes, we do not use garlic & onion much in Ayurvedic cooking - but when the time is right for it, we use it. In this case, if you are feeling a head cold, cough, congestion, then it might be time to use some garlic and onion in your cooking.

  • Onion is a natural decongestant and lung tonic, but it does change it qualities once cooked. Just breathing in a raw onion can help clear congestion and mucus - try it, you will see. It becomes less stimulating and more vata-friendly once cooked. Raw onion is better for kapha (cooked onion is also good for kapha).
