BEET LEMON RELISH

Makes 1 cup, 5 minutes


INGREDIENTS

  • 1 small beet, peeled

  • Juice of 1 whole lemon

  • Pinch of salt


DIRECTIONS

  1. Begin by grating the peeled beet using a cheese grater.

  2. Grate beet until you have about 1 cups worth of grated beet.

  3. Place grated beet in small mixing bowl.

  4. Top with pinch of salt & lemon juice. Mix together and serve as a topping to a meal, grain bowl, taco etc.



Notes

  • This is a classic Ayurvedic formula that especially benefits those who have a gluggy gallbladder.

  • If you are having issues digesting fats or want an easy sweet, salty, sour compliment to your meals that is also deeply nourishing and digestive - try this.

  • Goes great on any grain bowl, tacos, burritos, kanjee bowl, or kitchari!
