CALMING LEMON ROSE CHAI MUFFINS

10-12 muffins, 30-40 minutes
INGREDIENTS
Dry:
1 1/2 cups spelt flour
1/2 cup almond flour
2 tbsp hemp seeds
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp mineral salt
1 tsp fennel seeds, lightly ground
1/2 tsp cardamom, freshly ground
Zest of 2 organic lemons
Wet:
3 flax eggs (3 tbsp ground flax + 9 tbsp water, rested 5 min)
2 tbsp lemon juice
1/2 cup maple syrup
1/4 cup melted ghee (or coconut oil)
1/3 cup almond or oat milk (more if needed for consistency)
1 1/2 – 2 tsp rose water
1 tsp vanilla extract
DIRECTIONS
Preheat oven to 350°F (175°C). Line or grease a muffin tin.
In a large bowl, whisk together spelt flour, almond flour, hemp seeds, baking powder, baking soda, salt, fennel, cardamom, and lemon zest.
In another bowl, whisk flax eggs, lemon juice, maple syrup, melted ghee, almond/oat milk, rose water, and vanilla.
Fold wet into dry until just combined. Batter should be thick but scoopable (add 1–2 tbsp more milk if too stiff).
Divide evenly into 10-12 muffin cups.
Bake 18–22 minutes, until lightly golden and a toothpick comes out clean.
Cool 10 minutes before removing from pan.
Notes
These muffins are very calming while slightly uplifting. Harmonizing to the mind and body.
Good for all doshas - the spices in these muffins make the heavy spelt flour more digestible for kaphas.
Kid-friendly, may even calm them down when they are being irritable :).
