CILANTRO LIME RICE


4 servings, 25 minutes


INGREDIENTS


  • 1 cup basmati rice, rinsed 

  • 2 cups water (or coconut milk)

  • 2 inch peice of ginger, peeled and Grated 

  • 1/2 cup fresh cilantro, chopped

  • Zest of 1 lime

  • Juice of 1 lime

  • Salt and pepper to taste

  • Dash of red pepper flakes (optional)


DIRECTIONS


  1. Add the water, rice, and ginger to a medium pot over high heat.

  2. Bring to a boil, cover, and reduce to a simmer until rice is tender/ cooked, adding more water/ liquid as needed. 

  3. Turn off heat, allow to cool. Add the lime juice, lime zest, fresh cilantro, salt and pepper to taste, and dash of red pepper flakes if using. Mix together and enjoy!  



Notes

  • Great side dish for the summer - satiating & cooling.

  • Use in any grain bowl!

  • Option to add toasted pine nuts or sunflower seeds for a crunchy texture to this rice. Both would be sattvic and cooling.

  • Option to make this into coconut cilantro rice by subbing 1 cup of water + 1 cup coconut milk for the 2 cups of water. Not advised for kaphas due to the heavy and oily qualities of coconut milk plus rice. But for vata & pitta it would be lovely.
