Makes 1 cup, 10 minutes
INGREDIENTS
1 cup dates, pits removed, chopped, soaked in hot water for 15 mins
½ cup fresh cilantro, chopped
2 tbsp grated fresh ginger
Juice of 1 small orange
Juice of ½ lemon
1 tbsp rose water (optional but lovely)
1 tbsp raw honey
½ tsp ground cinnamon
½ tsp ground cardamom
Pinch of Himalayan salt
DIRECTIONS
Place all ingredients in a blender or food processor.
Pulse to chop the dates and mix all ingredients until a juicy salsa consistency is formed

Notes
Looks can be deceiving, this chutney is FULL of flavor. It has amazing depth and is a great sweet and savory compliment to any meal.
Add as a pleasing compliment to meals such as grain bowls, tacos, rice dishes, kitchari, mung bean pancakes (see recipe), etc.
