DATE & GINGER CHUTNEY

Makes 1 cup, 10 minutes


INGREDIENTS

  • 1 cup dates, pits removed, chopped, soaked in hot water for 15 mins

  • ½ cup fresh cilantro, chopped

  • 2 tbsp grated fresh ginger

  • Juice of 1 small orange

  • Juice of ½ lemon

  • 1 tbsp rose water (optional but lovely)

  • 1 tbsp raw honey

  • ½ tsp ground cinnamon

  • ½ tsp ground cardamom

  • Pinch of Himalayan salt


DIRECTIONS

  1. Place all ingredients in a blender or food processor.

  2. Pulse to chop the dates and mix all ingredients until a juicy salsa consistency is formed

Notes

  • Looks can be deceiving, this chutney is FULL of flavor. It has amazing depth and is a great sweet and savory compliment to any meal.

  • Add as a pleasing compliment to meals such as grain bowls, tacos, rice dishes, kitchari, mung bean pancakes (see recipe), etc.
