EASY SPELT PANCAKES

INGREDIENTS
1 cup spelt flour (or for kapha, option to sub: ¾ cup buckwheat flour + ¼ cup arrowroot for lightness)
1 tsp cardamom powder
1/2 tsp cinnamon powder
1 tbsp raw cane sugar (or coconut sugar for kapha)
1/2 tsp baking soda
1 tbsp flaxseed meal (optional but grounding and mildly binding)
Pinch of salt
1/4 tsp vanilla extract
3/4 - 1 cup water or plant milk (adjust for batter consistency)
1 tbsp ghee or coconut oil, plus more for cooking
DIRECTIONS
Mix dry ingredients: In a bowl, combine flour, cardamom, cinnamon, sugar, salt, and baking soda.
Add wet ingredients: Stir in water or milk, vanilla, and ghee/coconut oil. Mix just until smooth, don't overmix.
Cook: Heat a skillet over medium heat. Grease lightly with ghee. Pour 1/4-1/2 cup batter per pancake (or to your desired size). Cook ~2–3 minutes until bubbles form, flip, and cook another 2 minutes.
Serve warm with a schmear of ghee, drizzle of maple syrup/honey, or a spoon of stewed fruit like peaches, strawberries, cherries, apples, or pears.
Notes
A simple yummy weekend breakfast everyone can enjoy.
If you'd like to fancy it up a bit and serve with stewed fruit, that is encouraged :). Whatever you have time for. Here is a recipe for stewed apples, just sub any seasonal fruit for the apples - peaches, strawberries, cherries, pears are good options.
