ENERGIZING SAFFRON CARDAMOM OATMEAL



2 servings, 10 minutes


INGREDIENTS


  • 1 tbsp ghee

  • 1 cup organic rolled oats

  • 1/2 tsp cardamom powder, freshly ground

  • 2 finger pinch saffron threads (about 4-5 threads), broken up between fingers

  • 1/2 tbsp organic raw cane sugar (add more to taste)

  • 2 finger pinch of salt

  • 1 cup water

  • 1 cup organic plant-based milk (unsweetened)

  • Chopped dates & walnuts for topping


DIRECTIONS


  1. Heat the ghee in a medium pot over medium heat. Add the rolled oats and toast in the ghee for 1-2 minutes.

  2. Add the cardamom and saffron - pinch the saffron in between your fingers to break it up.

  3. Add the cane sugar, salt, water, and milk. Allow to simmer until the oats are cooked - about 5-7 minutes (keep an eye on it because milk has a tendency to over-flow when boiling).

  4. Serve with chopped dates and walnuts. Enjoy!


Notes

  • This is one of my favorite ways to make oatmeal. I can literally feel my vata/pitta body coming back to life when I eat it.

  • This is a great breakfast to have when you are recovering from burnout, inflammation, nervous system exhaustion or overstimulation and you want something that brings you back some VITALITY.

  • Kaphas can also enjoy this in moderation - although, oats are not the best grain for them. I would switch the cane sugar for honey and add it when the oatmeal is cool enough to eat - DO NOT cook honey. You can also add a pinch of ginger powder and use seeds and raisins as the topping instead of nuts and dates. Also, a warm buckwheat cereal would be a good substitution for the oats for you.
