GRAB & GO BREAKFAST BARS




8-10 bars, 20 minutes


INGREDIENTS


  • ½ cup soft pitted dates (about 6-8 dates)

  • ¼ cup almond butter (or sunflower seed butter if nut-free)

  • ¼ cup applesauce (or mashed banana, pumpkin puree, or grated apple)

  • 2 tablespoons maple syrup

  • ½ teaspoon vanilla extract

  • 1 ¼ cup rolled oats

  • 2 tablespoons ground flaxseed

  • 1 teaspoon cinnamon powder

  • 1/2 teaspoon cardamom, freshly ground

  • 1/4 tsp of ginger powder 

  • Pinch of salt


Topping (optional)

  • 1-2 tbsp dark chocolate chips

  • Sprinkle of Himalayan salt


DIRECTIONS


  1. Preheat to 325°F (163°C). Line an 9x9 pan with parchment paper.

  2. Note to save time - add the flaxseed, cinnamon, cardamom, ginger, and salt to a spice grinder and grind all together into a uniform powder.

  3.  Add all the ingredients to a food processor and blend until a sticky dough forms.

  4. Press the mixture evenly into the prepared pan - I like to place a sheet of parchment paper on top of the gooey mixture, then use a can of coconut milk as a rolling pin to roll out the mixture.

  5. Once rolled, top with chocolate chips if using.

  6. Bake for 12-15 minutes, until firm and very lightly golden on top. The bars should feel set but still soft in the middle.

  7. Spread the melted chocolate chips over the bars using a butter knife and top with a sprinkle of himalayan salt. 

  8. Let cool in the pan for 10 minutes, then lift out using the parchment paper and cut into bars or squares.



Notes

  • These will get addicting, and you will want to have them all the time. Something about a nourishing breakfast that you can just grab and not have to dirty any dishes - FREEDOM!

  • Good for all doshas!

  • If you use mashed banana instead of applesauce, it will have more of a banana taste, same with the other substitutes. If using pumpkin puree, add a bit more maple syrup for extra sweetness since pumpkin is not as sweet.
