HOMEMADE CURRY POWDER

About 1/2 cup of spice mix, 5 minutes
INGREDIENTS
2 tbsp coriander seeds
2 tbsp cumin seeds
1 tsp mustard seeds
1 tbsp ground turmeric
1/2 tsp black peppercorns
1 tsp ground cinnamon
1 tsp cardamom seeds (or freshly ground cardamom)
1/2 tsp salt
DIRECTIONS
Dry roast the cumin seeds, coriander seeds, and mustard seeds until aromatic and mustard seeds begin to pop.
Once cool (just not piping hot), add to a spice grinder/ coffee grinder with the other ingredients and blend into a uniform powder. Store in a spice jar for up to 30 days. Use to spice or flavor any savory meal.

Notes
Yes, you can get curry powder pre-ground from the store - BUT REMEMBER - spices have a medicinal shelf life of about 30 days before they start losing their potency.
Hence, if you are using spices to strengthen your gut health, you want to grind them fresh from the seed when you can - that is why we are using cumin seeds, coriander seeds, mustard seeds, black peppercorns, and cardamom seeds, and grinding them fresh with the other ingredients.
