KALE PESTO

Makes 1 1/2 cups, 5 minutes
INGREDIENTS
2 cups kale, chopped stems removed
1 cup basil, chopped
Juice of 1/2 lemon
1/2 cup pumpkin seeds (or walnuts or pine nuts)
Salt & pepper to taste
1/4-1/2 cup olive oil (adjust to desired consistency)
DIRECTIONS
Place everything except the olive oil in a food processor and begin to blend.
Slowly add the olive oil as it is blending.
Taste and adjust seasonings as needed. Enjoy!
