KALE PESTO




Makes 1 1/2 cups, 5 minutes


INGREDIENTS

  • 2 cups kale, chopped stems removed

  • 1 cup basil, chopped

  • Juice of 1/2 lemon

  • 1/2 cup pumpkin seeds (or walnuts or pine nuts)

  • Salt & pepper to taste

  • 1/4-1/2 cup olive oil (adjust to desired consistency)


DIRECTIONS

  1. Place everything except the olive oil in a food processor and begin to blend.

  2. Slowly add the olive oil as it is blending.

  3. Taste and adjust seasonings as needed. Enjoy!
