NIGHTSHADE-FREE SALSA VERDE

INGREDIENTS
1 peeled cucumber
1 small yellow onion or shallot (or half of a large onion)
1/2 tsp salt
2 tbsp ghee
1/2 tsp cumin seeds, freshly ground
1 cup fresh cilantro
1 medium lime (juice)
1/3 cup water
DIRECTIONS
Preheat the oven to 450.
Slice the peeled cucumber into spears and quarter the onion, separate the pieces. Coat with ghee and add to a baking sheet with salt & cumin. Bake for 15 minutes.
Blend the baked cucumber & onion with lime juice, water, and cilantro. Add salt/ pepper to taste. Enjoy :).
Notes
Perfect nightshade-free salsa that actually tastes pretty similar to tomatillo salsa!
Nightshades are group of vegetables (common examples of tomatoes, peppers, eggplant, white potato) that we don't use a lot in Ayurvedic cooking because they tend to provoke inflammation and the mind - 2 things we do NOT want provoked am I right?
