ONE-POT CREAMY SWEET POTATO SOUP

INGREDIENTS
2 tbsp ghee
1 leek, chopped and rinsed
1-2 inch piece of fresh ginger, grated
1 tsp ground coriander, freshly ground
3 medium sweet potatoes, peeled and chopped
1 medium apple, peeled and chopped (red sweet variety, not green or sour)
1/2 tsp paprika
3 cups veggie broth
1 1/2 cups coconut milk
Salt & pepper to taste
Fresh lemon juice for serving
Fresh cilantro or parsley for serving
Optional roasted veg topping (as pictured)
1 head cauliflower, chopped into florets
2-3 cups kale, chopped, stems removed
1/3 cup pine nuts
Ghee for baking
1 tsp cumin seeds
Salt & pepper to taste
Fresh lemon juice for topping
DIRECTIONS
If you are making the roasted veggie topping, go ahead and get that started: Throw the cauliflower, ghee, cumin seeds, salt and pepper into a mixing bowl - then add to a baking sheet and roast at 425 degrees Fahrenheit for 20 minutes. Then add the kale and pine nuts and roast for an additional 5-8 minutes.
While that is roasting: heat the ghee in a large pot over medium heat. Add the leeks and saute until translucent.
Add the coriander and ginger - saute for 30 seconds then add the sweet potatoes, apples, paprika, veggie broth, coconut milk, and salt and pepper.
Bring to a boil then reduce to a simmer, cover, and allow to simmer until sweet potatoes are soft (about 20-30 minutes).
Once soft, transfer to a blender once cool or use an immersion blender in the same pot to blend the soup into a uniform consistency.
Serve with fresh cilantro, parsley, optional roasted veggie topping, and/or some toasted sprouted grain bread with a schmear of ghee. Enjoy!

Notes
What a delicious cozy tasty meal - full of sweet and savory flavors. This is quite a delicious and tummy loving soup.
Great for vata & pitta type of sensitive, inflamed, variable, anxious digestion. Very soothing for the gut.
For kapha - it is not so bad, especially during fall & early winter. The only thing I would add would be a bunch of that roasted veggie topping or just steamed greens and a dash of cayenne or red pepper flakes.
