PUMPKIN SPICE (with latte)


2 lattes, 1/4 cup mix, 5 minutes for the mix, about 10 minutes for the latte


INGREDIENTS


Pumpkin Spice Mix


  • 3 tbsp cinnamon powder

  • 2 tsp ground ginger

  • 2 tsp nutmeg (grated fresh from the seed)

  • 1 tsp clove powder

  • 1 tsp allspice (option to grind fresh from the seed)

  • 1 1/2 tbsp cardamom powder (grated fresh from the seed)


Latte (2 servings)


  • 2 cups almond/oat milk

  • 3 tbsp pumpkin puree

  • 2–2 1/2 tsp pumpkin spice mix

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • Optional: tiny pinch of black pepper

  • Optional: 1 shot of espresso or 1/2 cup of coffee


DIRECTIONS


  1. To make the spice mix: Grind the cardamom seeds in a coffee/ spice grinder and grate the nutmeg fresh into a powder using a handheld grater or cheese grater. You can also grind fresh allspice seeds to make a powder or use a good-quality organic powder. Mix all powders together in a bowl and store in a glass spice jar in a cool dark place for 30 days.

  2. To make the latte: In a saucepan, whisk milk, pumpkin puree, spice mix, maple syrup, salt, and vanilla. Warm slowly over medium heat, do not boil.

  3. Once steaming, blend with a hand frother, blender, or immersion blender.

  4. Stir in espresso/coffee if using.

  5. Taste: add another drizzle of maple or sprinkle of spice only if needed.

  6. Pour into two mugs. Dust with a sprinkle of pumpkin spice on top.



Notes

  • Feel free to use this spice mix for any fall treat - sweet and warm breakfast items, morning coffee, baked goods, etc. It will make whatever you are eating, more digestible and better for the mind & body as a whole.

  • Most pumpkin spice mixtures don't include cardamom, but we are including it here. Cardamom helps to antidote the harmful effects of caffeine. It also makes dairy more digestible. If you are using this for a caffeinated or dairy beverage, I recommend keeping at least a little bit of cardamom in the recipe, even if you don't like it (you can't taste it that much anyways).
