QUINOA FRIED "RICE"



3 servings, 30 minutes


INGREDIENTS


Tofu egg (can also use actual eggs if you don't like tofu and have access to good quality)

  • 1 tbsp ghee

  • 1 cup quinoa, rinsed

  • 1/2 block organic tofu 

  • 1/4 tsp turmeric powder

  • 1 tbsp coconut aminos or tamari 

  • 1-2 tbsp coconut milk (add more if you like it extra creamy :))

  • Salt and pepper to taste 


Stir-fry 

  • 1 tbsp ghee

  • 3 carrots, peeled and chopped into small pieces 

  • 1 cup kale, stems removed, chopped

  • 2-inch piece of fresh ginger, grated 

  • 1 clove of garlic (omit if sattvic, optional)

  • 2 tbsp coconut aminos or tamari 

  • 1 tbsp soy sauce (optional for extra flavor)

  • 1 tbsp sesame oil 

  • Fresh cilantro leaves for topping 

  • Fresh lime juice for topping


DIRECTIONS


  1. Start by soaking your rinsed quinoa in a bowl of water for 5 minutes. Once it is done soaking add to a medium pot with 2 cups of water, bring to a boil, reduce to a simmer and allow simmer until it is tender (about 15 minutes).

  2. While that is soaking/cooking, peel and dice the carrots, kale, garlic, and peel and grate the ginger, set aside.

  3. In a medium saucepan over medium heat, heat 1 tbsp of ghee, add the tofu by crumbling with your fingers (like a tofu scramble). Add the turmeric, coconut aminos, salt and pepper. Heat until the tofu is golden brown. Add the coconut milk at the end of cooking. Once cooked, transfer to a small bowl and set aside.

  4. Add 1 tbsp ghee to the same pan you were using before for the tofu scramble. Add the carrot and kale and sauté until slightly tender (about 3-5 mins). 

  5. Add the ginger and garlic and stir frequently for 2-3 mins to continue to cook the carrots and prevent burning. 

  6. Add the tofu scramble and cooked Quinoa to the carrots. Stir to combine. 

  7. Stir in the coconut aminos/ soy sauce and sesame oil. 

  8. Serve with fresh cilantro leaves and freshly squeezed lime juice. Enjoy!



Notes

  • You can substitute an egg in this dish if you have access to good quality. Note that adding an egg will change the energetics of this dish. If you find yourself feeling irritable, angry, frustrated, anxious, use the tofu instead. Eggs are best suited for vata, then pitta, and lastly kapha (they are heavy).

  • ALWAYS buy organic tofu. Tofu is also not sattvic (similar to eggs). BUT it is better suited for pittas and kaphas - it's cooling & heavy nature makes it especially good for pittas.

  • Tofu's cold and heavy nature isn't great for kaphas BUT when prepared with the right spices and ingredients like in this dish - it balances the qualities and makes it okay. Hooray Ayurveda!
