ROASTED FENNEL BULB

INGREDIENTS
2-3 large fennel bulbs, stalks/ fronds removed
3 tbsp avocado oil or melted ghee
1 tsp dried thyme leaves
Salt & pepper to taste
DIRECTIONS
Preheat the oven to 400 degrees Fahrenheit.
Cut the fennel bukbs in half lengthwise. Then, into 1/2 inch thick slices lengthwise.
Arrange the slices on a baking sheet and coat with oil/ ghee, thyme, and salt and pepper.
Roast the slices in the oven for 35 minutes or until the slices are tender and have crispy edges. Enjoy!
Notes
Amazing addition to any grain bowl or side dish at parties. I like to add it to mashed potatoes with a lentil gravy - tastes like thanksgiving.
Great for easing digestion, calming the mind, and stimulating breast milk flow.
Good for all doshas!
