ROASTED FENNEL BULB


3 servings, 40 minutes


INGREDIENTS

  • 2-3 large fennel bulbs, stalks/ fronds removed

  • 3 tbsp avocado oil or melted ghee

  • 1 tsp dried thyme leaves

  • Salt & pepper to taste

DIRECTIONS

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Cut the fennel bukbs in half lengthwise. Then, into 1/2 inch thick slices lengthwise.

  3. Arrange the slices on a baking sheet and coat with oil/ ghee, thyme, and salt and pepper.

  4. Roast the slices in the oven for 35 minutes or until the slices are tender and have crispy edges. Enjoy!



Notes

  • Amazing addition to any grain bowl or side dish at parties. I like to add it to mashed potatoes with a lentil gravy - tastes like thanksgiving.

  • Great for easing digestion, calming the mind, and stimulating breast milk flow.

  • Good for all doshas!
