SAVORY QUINOA PORRIDGE


2 servings, 15-20 minutes


INGREDIENTS


  • 1 cup quinoa, rinsed

  • 2-3 cups veggie broth (add more to achieve porridge consistency)

  • 1-2 tbsp ghee (adjust to taste)

  • 1-2 tbsp gomasio spice mix (adjust to taste)

  • Salt and pepper to taste


DIRECTIONS


  1. Add rinsed quinoa and veggie broth to a medium pot over medium heat. Bring to a boil then reduce to a simmer. Allow to simmer until quinoa is cooked/ tender, adding more liquid/ broth to achieve a porridge-like consistency (about 15 minutes).

  2. Once cooked, turn off heat and stir in ghee, gomasio, salt and pepper - start with a small amount of each and adjust to desired taste. Enjoy warm.



Notes

  • One of my favorite breakfast recipes for the fall/ winter season - extremely nourishing and tastes like cheese grits!

  • Great for all doshas just go easy on the salt and ghee for kaphas. Gomasio is already salty, so make sure you don't over salt it :).
