SAVORY QUINOA PORRIDGE

2 servings, 15-20 minutes
INGREDIENTS
1 cup quinoa, rinsed
2-3 cups veggie broth (add more to achieve porridge consistency)
1-2 tbsp ghee (adjust to taste)
1-2 tbsp gomasio spice mix (adjust to taste)
Salt and pepper to taste
DIRECTIONS
Add rinsed quinoa and veggie broth to a medium pot over medium heat. Bring to a boil then reduce to a simmer. Allow to simmer until quinoa is cooked/ tender, adding more liquid/ broth to achieve a porridge-like consistency (about 15 minutes).
Once cooked, turn off heat and stir in ghee, gomasio, salt and pepper - start with a small amount of each and adjust to desired taste. Enjoy warm.
Notes
One of my favorite breakfast recipes for the fall/ winter season - extremely nourishing and tastes like cheese grits!
Great for all doshas just go easy on the salt and ghee for kaphas. Gomasio is already salty, so make sure you don't over salt it :).
