SPRING PEA SHOOT PESTO

1 cup, 10 minutes


INGREDIENTS

  • 1/4 cup Sunflower seeds

  • 2 cups pea shoots

  • Juice of 1/2 lemon

  • 2 tbsp fresh dill, chopped

  • 3 finger pinch asafoetida powder

  • 1/4 cup olive oil

  • Salt and pepper to taste


DIRECTIONS

  1. Add the sunflower seeds to a medium saucepan over medium heat. Dry roast until brown/ aromatic (about 2-3 minutes).

  2. Add the sunflower seeds and the rest of the ingredients to a food processor. Blend, slowly adding the olive oil.

Adjust salt, pepper, and lemon juice to desired taste.



Notes

  • The spring time calls for a light herby green sauce like a pesto. Loaded with spring greens and leafy herbs!

  • Add to any grain bowl, roasted veggies, sandwiches, wraps, pasta, or on a flatbread as a pizza!
