SPRING PEA SHOOT PESTO

1 cup, 10 minutes
INGREDIENTS
1/4 cup Sunflower seeds
2 cups pea shoots
Juice of 1/2 lemon
2 tbsp fresh dill, chopped
3 finger pinch asafoetida powder
1/4 cup olive oil
Salt and pepper to taste
DIRECTIONS
Add the sunflower seeds to a medium saucepan over medium heat. Dry roast until brown/ aromatic (about 2-3 minutes).
Add the sunflower seeds and the rest of the ingredients to a food processor. Blend, slowly adding the olive oil.
Adjust salt, pepper, and lemon juice to desired taste.
Notes
The spring time calls for a light herby green sauce like a pesto. Loaded with spring greens and leafy herbs!
Add to any grain bowl, roasted veggies, sandwiches, wraps, pasta, or on a flatbread as a pizza!
