ZUCCHINI FRITTERS

8 fritters, 15 minutes
INGREDIENTS
4 medium zucchinis, grated
1/2 cup hemp seeds
1/2 cup chickpea flour (or spelt flour for Vata/Pitta)
4 tbsp fresh basil, chopped
1 tsp chili powder (optional)
1/2 tsp fennel seeds
1/2 tsp mineral salt (or to taste)
4-5 tsp lime or lemon juice, freshly squeezed
2-3 tbsp water (as needed to bind)
Ghee or avocado oil for pan-frying
DIRECTIONS
Grate & Squeeze: Grate zucchinis and squeeze out excess water.
Mix: Combine zucchini, hemp seeds, flour, dill, cumin, fennel, salt, and lime juice. Add water if needed to bind.
Shape: Form into small patties.
Cook: Pan-fry in ghee or avocado oil, 3-4 mins per side until golden.
Serve: Enjoy with a dollop of coconut yogurt, cooked meat of choice (chicken, turkey, or white fish would be ideal), cooked couscous or any #grainsideoption
