ZUCCHINI FRITTERS



8 fritters, 15 minutes


INGREDIENTS


  • 4 medium zucchinis, grated

  • 1/2 cup hemp seeds

  • 1/2 cup chickpea flour (or spelt flour for Vata/Pitta)

  • 4 tbsp fresh basil, chopped

  • 1 tsp chili powder (optional)

  • 1/2 tsp fennel seeds

  • 1/2 tsp mineral salt (or to taste)

  • 4-5 tsp lime or lemon juice, freshly squeezed

  • 2-3 tbsp water (as needed to bind)

  • Ghee or avocado oil for pan-frying


DIRECTIONS


  1. Grate & Squeeze: Grate zucchinis and squeeze out excess water.

  2. Mix: Combine zucchini, hemp seeds, flour, dill, cumin, fennel, salt, and lime juice. Add water if needed to bind.

  3. Shape: Form into small patties.

  4. Cook: Pan-fry in ghee or avocado oil, 3-4 mins per side until golden.

  5. Serve: Enjoy with a dollop of coconut yogurt, cooked meat of choice (chicken, turkey, or white fish would be ideal), cooked couscous or any #grainsideoption
