CUMIN CAULIFLOWER RICE

INGREDIENTS

  • 1 head cauliflower

  • 1 tsp cumin seeds

  • 1/4 tsp turmeric powder

  • 1 tbsp of ghee

  • 1/3 cup sunflower seeds (optional)

  • 1 handful of fresh arugula leaves (optional)

  • Salt & pepper to tatse

  • Olive oil for drizzle/ topping

  • Fresh lemon juice for topping


DIRECTIONS

  1. Pulse cauliflower in food processer until it is a rice like consistency.

  2. Heat ghee or oil in a large saucepan over medium heat.

  3. Add cumin seeds and heat until aromatic (2-3 mins).

  4. Add the sunflower seeds and turmeric powder and heat for an additional minute.

  5. Add the cauliflower rice and saute until softened or browned (10-15 minutes).

  6. Add salt & pepper to taste. Option to add to a mixing bowl with arugula and olive oil. Serve with fresh lemon juice. Enjoy!



Notes

  • Great non-grain side option for kaphas!

  • You can make it into a burrito bowl by adding cooked tofu, meat, steamed greens, mung beans, and a sauce (maybe a pesto sauce YUM)!
