CUMIN CAULIFLOWER RICE

INGREDIENTS
1 head cauliflower
1 tsp cumin seeds
1/4 tsp turmeric powder
1 tbsp of ghee
1/3 cup sunflower seeds (optional)
1 handful of fresh arugula leaves (optional)
Salt & pepper to tatse
Olive oil for drizzle/ topping
Fresh lemon juice for topping
DIRECTIONS
Pulse cauliflower in food processer until it is a rice like consistency.
Heat ghee or oil in a large saucepan over medium heat.
Add cumin seeds and heat until aromatic (2-3 mins).
Add the sunflower seeds and turmeric powder and heat for an additional minute.
Add the cauliflower rice and saute until softened or browned (10-15 minutes).
Add salt & pepper to taste. Option to add to a mixing bowl with arugula and olive oil. Serve with fresh lemon juice. Enjoy!
Notes
Great non-grain side option for kaphas!
You can make it into a burrito bowl by adding cooked tofu, meat, steamed greens, mung beans, and a sauce (maybe a pesto sauce YUM)!
