GRAPEFRUIT GLOW MUFFINS


10-12 muffins, 30 minutes (10 minute prep + ~20 minute bake)


INGREDIENTS


Wet Ingredients

  • 1/2 cup + 2 tablespoons freshly squeezed grapefruit juice

  • 2 tablespoons freshly grated grapefruit zest

  • 1/2 teaspoon freshly grated lemon zest

  • 1 tablespoon freshly grated fresh ginger

  • 1/2 teaspoon ground ginger

  • 1/3 cup melted ghee

  • 1/3 cup pure maple syrup

  • 2 room temperature eggs (or flax eggs with 2 tbsp ground flax seeds + 6 tbsp of water soaked while you assemble the other ingredients)

  • 1/3 cup full-fat plain yogurt

  • 1/2 tablespoon vanilla extract


Dry Ingredients

  • 1 1/2 cups gluten-free 1:1 baking flour blend

  • 1/2 cup finely ground almond flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon cardamom

  • 1/4 teaspoon salt

  • 3 tablespoons hemp seeds


DIRECTIONS


  1. Preheat oven to 350°F. Line or grease a 12-cup muffin tin.

  2. In a large bowl, whisk together: grapefruit juice, grapefruit zest, lemon zest, fresh ginger, ground ginger, melted ghee, and maple syrup.

  3. Add eggs, yogurt, and vanilla. Whisk until smooth and glossy.

  4. In a separate bowl combine: gluten-free flour, almond flour, baking soda, baking powder, cinnamon, cardamom, and salt.

  5. Gently fold dry ingredients into wet until just combined. Do not overmix.

  6. Fold in hemp seeds.

  7. Fill muffin cups about 3/4 full.

  8. Bake 18–22 minutes, until tops are lightly golden and a toothpick comes out clean.


Notes

  • I named these "glow muffins" for a reason. The grapefruit gives a sense of brightness and lightness which is something we all need towards the end of February. We want sunshine, warmth, happiness, to lighten up - these muffins give that vibe.

  • Grapefruit is one of my favorite winter fruits - it is also one of the only fruits that are in season in the winter. They are EXCELLENT for weight loss, constipation, and removing excess mucus from the stomach and lungs. This makes them a great kapha fruit. Whenever I have a weight loss client during the winter/ spring and they are looking for a good breakfast, grapefruit is my go-to option.

  • PS: My 1-year-old was obsessed with these, although there were crumbs everywhere because they are a lighter muffin. I personally liked them this way, BUT if you don't want them as crumbly, feel free to add 1 tbsp of arrowroot powder with the dry ingredients to help maintain structure.
