KALE CHIMICHURRI SAUCE

Makes 3 cups, 5 minutes


INGREDIENTS

  • 1 cup kale, chopped, stems removed

  • 1 cup cilantro, chopped

  • 1/4 cup water

  • 1/2 cup cold pressed olive oil

  • 1 inch fresh ginger, grated

  • Juice from 2 limes

  • 1/4 cup pine nuts, pumpkin seeds or chopped almonds

  • Pinch of asafoetida

  • Salt to taste


DIRECTIONS

  1. Add all ingredients to a blender and blend until smooth :).



Notes

  • Great sauce that can go with just about anything - kitchari, grain bowl, burrito bowls, wraps, sandwiches, roasted veggies, meat, enchiladas, whatever you like!

  • Good for all doshas!
