KALE CHIMICHURRI SAUCE

Makes 3 cups, 5 minutes
INGREDIENTS
1 cup kale, chopped, stems removed
1 cup cilantro, chopped
1/4 cup water
1/2 cup cold pressed olive oil
1 inch fresh ginger, grated
Juice from 2 limes
1/4 cup pine nuts, pumpkin seeds or chopped almonds
Pinch of asafoetida
Salt to taste
DIRECTIONS
Add all ingredients to a blender and blend until smooth :).
Notes
Great sauce that can go with just about anything - kitchari, grain bowl, burrito bowls, wraps, sandwiches, roasted veggies, meat, enchiladas, whatever you like!
Good for all doshas!
