KITCHARI BURGERS


6-8 patties, 20 minutes


INGREDIENTS


Burgers

  • 4 cups cooked kitchari (classic or simple kitchari)

  • 2 flax eggs (2 tbsp ground flax seeds soaked in 6 tbsp water)

  • 1/4 cup breadcrumbs 

  • 2 tbsp soy sauce, tamari, or coconut aminos 

  • Fresh lemon juice for topping


Cilantro cream sauce (optional, the avocado crema also works really well here)

  • 1 cup fresh cilantro

  • 2 tbsp yogurt (regular or dairy-free)

  • 2 tbsp soaked pine nuts or cashews (can do a quick soak by soaking them in hot water for 10 minutes - use pine nuts for kapha & pitta)

  • 2 tbsp water (add more if needed for blending)

  • 1-2 tsp fresh ginger, grated

  • Salt & pepper to taste


DIRECTIONS


  1. Add all the ingredients for the burgers in a large mixing bowl and mix into a uniform burger-dough.

  2. Use your hands to form 6-8 equal-sized patties.

  3. Heat ghee or avocado oil in a large saucepan over medium heat. Add the patties. Allow to cook for 4-5 minutes each side (or until golden brown).

  4. While the burgers are heating, add all the ingredients for the cilantro cream sauce to a blender and blend until smooth.

  5. Serve the burgers with a spritz of fresh lemon juice, the cream sauce, and an optional arugula salad (use the salad only if it is during the late spring or summer).



Notes

  • If you have a lot of kitchari leftovers but are sick of eating kitchari - this recipe is for you.

  • I absolutely love making kitchari burgers - it is so easy to make and they are a fabulous way to re-purpose your leftovers.

  • Good for all doshas!
