PANEER CHEESE STICKS

5-6 cheese sticks, 15 minutes
INGREDIENTS
1/4 cup spelt flour (or almond flour)
1/4 cup chickpea flour
1/2 cup water
2 finger pinch asafoetida
salt & pepper to taste
1/4 tsp turmeric powder
1 block of paneer made from 1/2 gallon of milk cut into 5-6 1/2 inch strips
1 tbsp ghee
DIRECTIONS
Mix the flours and spices into a medium size bowl. Add the water. Stir into a thick dough (like thick pancake dough).
Heat the ghee in a medium saucepan over medium heat.
Dip the paneer strips in the batter and add the strips to the hot ghee 1 by 1.
Heat the battered paneer sticks in the ghee for 3-5 mins each side (until brown on each side).
Serve warm and add a side of steamed kale/veggies or a light greens soup to make into a meal.
Notes
Craving mozzarella cheese sticks but don't want the heaviness, bloat, and don't want to ruin your digestive system and add a bunch of toxins to your body? - Make this!
Best with freshly made paneer but if you don't have that on hand and are short on time, you can use store-bought too.
Pairs really well with a lighter soup like the green coconut soup, green mung bean soup, or green veggie soup. The lightness of the green veggies balances the heaviness of the paneer.
Also great finger food for parties!
