PANEER CHEESE STICKS

5-6 cheese sticks, 15 minutes


INGREDIENTS

  • 1/4 cup spelt flour (or almond flour)

  • 1/4 cup chickpea flour

  • 1/2 cup water

  • 2 finger pinch asafoetida

  • salt & pepper to taste

  • 1/4 tsp turmeric powder

  • 1 block of paneer made from 1/2 gallon of milk cut into 5-6 1/2 inch strips

  • 1 tbsp ghee


DIRECTIONS

  1. Mix the flours and spices into a medium size bowl. Add the water. Stir into a thick dough (like thick pancake dough).

  2. Heat the ghee in a medium saucepan over medium heat.

  3. Dip the paneer strips in the batter and add the strips to the hot ghee 1 by 1.

  4. Heat the battered paneer sticks in the ghee for 3-5 mins each side (until brown on each side).

  5. Serve warm and add a side of steamed kale/veggies or a light greens soup to make into a meal.



Notes

  • Craving mozzarella cheese sticks but don't want the heaviness, bloat, and don't want to ruin your digestive system and add a bunch of toxins to your body? - Make this!

  • Best with freshly made paneer but if you don't have that on hand and are short on time, you can use store-bought too.

  • Pairs really well with a lighter soup like the green coconut soup, green mung bean soup, or green veggie soup. The lightness of the green veggies balances the heaviness of the paneer.

  • Also great finger food for parties!
